Since I became wheat free, I have really been enjoying salads for breakfast. Yes, some people do think I am bizarre, but it's great to start the day with something so fresh and nutritious.
Today's salad was made up of
- A generous handful of green leaves (spinach, watercress and rocket)
- About 8 baby plum tomatoes (halved)
- 1/2 an avocado (sliced)
- A grated carrot
- 25g grated cheese
- tbsp pumpkin seeds
- tbsp sunflower seeds
- tbsp cashew pieces
then I added a dressing made from
- tbsp olive oil
- tsp balsamic vinegar
- tsp basil pesto (wheat free)
