ANZAC Biscuits


Ingredients

1 cup plain flour
1 cup rolled oats
1 cup brown sugar
1/2 cup coconut
125g butter
1 tablespoon golden syrup
1 tablespoon water
1/2 teaspoon bicarbonate of soda

Method

Sift the flour into a bowl, add sugar, oats and coconut
Put butter and golden syrup into a microwave bowl and heat until butter is melted
Add bicarb soda to the liquid mixture
Add the liquid to the dry ingredients
Mix thoroughly
Divide into little balls (about a teaspoon full) and place on greaseproof paper on a tray
Bake at 175 for 15-20 mins

Note: Most recipes use 2 tablespoons golden syrup. I had a lesson in making these the other day from a friend's mum. Her recipe differed in that it only uses one. After a little google search I found that using less makes the biscuits a little more chewy. If you want them to be more crunchy, use 2, or even 3, tablespoons.
