Wheat Free Spaghetti / zucchini pasta


I made my first wheat free spaghetti today. Also known as zucchini pasta (or courgette pasta).

It was very easy and turned out great. An excellent discovery as it means I can make 'pasta' dishes for both BB and me.

If you haven't already discovered this, all you need is a zucchini a peeler and Julienne Peeler.

1. Remove the green skin

2. Carefully (it's lethal!) work around the edges with the Julienne Peeler until you start to see the seedy bit (see photo) on the inside, then stop. You can save the middle for something else, but today I used mine to keep BB entertained while I finished cooking and asked him to feed them to our chickens.

3. Fry gently in a pan with a little avocado oil for about 5 mins. It does actually start to look pasta like in  texture so you know when it's done.

Then serve.

I used 2 zucchinis for one person. Obviously it depends on their size, but in this case I think 3 might have been better.
