Wheat Free Pork Bolognese

That's the best title I could come up with to describe this dish which is both wheat free and whole 30 compliant. It does look a bit like a mess in a bowl - I have to work on presentation don't I? It was steaming too, hence the paler parts of the photo, but sorry folks, I wasn't prepared to let it go cold just for the photo! It was delicious - far nicer than I expected.

Ingredients

300g free range organic pork mince
1 large teapoon ghee
1 onion
2 cloves garlic
1 cup sliced mushrooms
1 capsicum pepper
1 carton chopped tomatoes
1 heaped tsp dried sage
a generous sprinkling of garlic pepper

Method

Fry the pork mince in a pan (using a little bit of the ghee if desired)
Once you have this started chop all your vegetables
In a larger pan (wok) add the rest of the ghee, heat and then fry the onions
Add the garlic, mushrooms, capsicum peppers, and fry some more. 
Add tomatoes and sage and garlic pepper.

By this stage the mince should be cooked so that there are no pink bits, and it may even be starting to brown. Add the mince to the wok, mix well and continue cooking until the mince has been on the heat for 40 mins

Serve with courgette pasta (aka wheat free spaghetti)

Possibly not the first thing you would think of eating for breakfast, but using left over mince (or making extra on purpose) and adding it to some wheat free spaghetti makes a quick and easy, filling, wheat free breakfast.
