Rice Salad with Pecans and Baby Corn - Recipe

Wheat Free Rice Salad with Pecan Nuts and Baby Corn in a plastic lunch box

Ingredients

75g brown rice
2 spring onions
2-3 cobs baby corn
1/4 red capsicum
8-10 pecan nuts, chopped into reasonably large pieces
1tbsp olive oil
a dash of balsamic vinegar
Himalayan sea salt

Method

Put the rice in a pan of boiling water to cook
Mean while prepare the other ingredients
When the rice is cooked, drain and combine with the other ingredients
Put in your lunch box and you're ready to go
