Sausage Casserole - Slow Cooker Recipe

This is a great winter recipe. We have one day a week when we have a fairly slow morning and then head out to swimming lessons and a play date, not usually getting home until tea time. Slow cooked sausage casserole has become a favourite for this day. I love the smell as we arrive home too.
Sausage Casserole

The recipe is never the same twice, the joy of both the Slow Cooker and a casserole is that you can throw in what you like, depending on what's in the fridge that needs using up. This is what I used today.
6 quality sausages
about 8-10 small potatoes or sweet potatoes
one large onion
3 cloves garlic
half a leek
one courgette (it was close to the end of it's life, so I peeled it and then sliced it thinly
a handful round beans cut into small pieces (always trying to sneak some greens into my child!)
2 small carrots, sliced
1 dessert spoon plain flour (or coconut flour if you are wanting a grain free version)
350mls vegetable stock (best if its hot, so using stock cubes and boiling water is perfect)
A dollop of tomato puree
Sage and thyme to taste


  • Peel potatoes and cut into smaller pieces, parboil for about 5 mins, then drain and place in slow cooker
  • Gently fry sausages until brown, then remove from pan, cut into slices and place in slow cooker
  • If there is excess oil (probably not if you you used good sausages) pour it off, then fry onions in the same pan.
  • Add garlic and leek and fry for a little longer
  • Meanwhile add the thinly sliced carrot, courgette and beans to the slow cooker
  • Sprinkle flour over the top of the things in the frying pan and stir, then pour over the stock, add tomato puree and herbs and mix well (get all the sausage gunk from the bottom of the pan too!)
  • Add all of this to the slow cooker, mix well, and cook on Medium for about 6 hours.
Taste testing raw onion and raw garlic too!

To continue with the Cooking with Kids theme, BB did give me a hand today. OK - so I spent half of the time scared that the slow cooker was going on the floor, or that he would drop the lid, but he didn't. He had a bit of a stir of the things in the pot, but mostly he enjoyed checking out and sorting the ingredients. 

He carefully moved all the carrot and some onion into
 a separate bowl, and tried a bit more raw onion!
