Turkey Stuffed Sweet Potatoes

Sweet potatoes are supposed to be amazing for you. I like them, but I do find them to be a bit sweet. I like to balance the flavour with lemon juice. I adapted this recipe to my own taste.

Ingredients

Serves 2

2 sweet potatoes
250g turkey mince
1tbsp avocado oil
1 medium onion, diced
cayenne pepper to taste
salt and pepper to taste
2 cloves garlic crushed
1/2 tin chopped tomatoes
about 15 round green beans, diced
1 lemon

Method

  • Cut the sweet potatoes in half and coat the cut side in oil. Place face down on a baking tray and bake for about 30 mins at 200ºC until soft
  • Heat the oil in a large frying pan
  • Add the onion and fry until it just begins to go clear
  • Add the turkey mince and fry until there is no more pink bits. You make need to stir fairly frequently and to break up the mince
  • Add the rest of the ingredients and simmer for about 20 mins
  • When the sweet potato is cooked, remove from oven, scoop out the centres, mix with the mince and return to the skins
  • Place them back in the oven for about 5 mins and then serve with 1/2 a lemon per person (squeeze the juice over the sweet potato)

Crispy Kale
Coat the kale in an oil of your choice (make sure it is well covered or it will burn) and place in a baking tray in an oven at 200ºC for 10 mins
