Grain Free Fruit Crumble Topping



It's been a while since I posted a recipe. Things have been a little busy around here. However, this weekend I made a couple of really nice grain free dishes that I thought I'd share.

Firstly, I really think I have cracked it regarding a 'crumble' topping that is grain free. I have tried a few different combinations and this one is definitely my favourite. The great thing about it too is that it is actually healthy enough to eat for breakfast, and BB loves it as a mid morning snack.

Grain Free Crumble topping



This was quite a big crumble - I used four large apples and an equal amount of blackberries in the base - if you are making a smaller one you might want to halve the recipe

Ingredients

1/2 cup almond flour
1/4 cup coconut flour
1/4 cup desiccated coconut
1 heaped tbsp flaxseed
1 heaped tbsp sugar (optional)
Approx 2 tbsp butter or coconut oil

Method

Mix all of the dry ingredients, then add the butter/coconut oil and combine with your fingertips as you with a traditional crumble. You may want to add the butter in stages, using 1 tbsp at first, and adding more as needed. I say this because it is best to use better at room temp so it is soft but solid, rather than to melt it - so measuring a tablespoonful can tricky.

I always partly cook my fruit in the microwave first and drain off any excess juice (which can be poured back on at the point of serving). Then add the crumble to cover the fruit in an oven proof dish and bake for 15-20 mins at 180ºC until top starts to brown. 


Serve with coconut milk or ice cream, and enjoy!
