Whole 30 Day 15 - Half way day!

Whole 30 Day 15! This means we are half way!

I felt really tired today, and have a bit of a headache and a thirst - this could be something to do with the fact that I got up at 4am. Early night planned for this evening.

Breakfast today was a bit of an effort to get motivated for, but I was really pleased I did - I made a mushroom omelette with sweet potato hash. I put a little dairy free pesto on the omelette before I ate it and it was delicious.


At lunch time I wasn't really hungry again,  I did however manage a little easy meal of about 1/2 a left over salmon fillet from the fridge served with cucumber.



Having eaten nothing but salad for days I decided it was time to cook some of the veggies that are waiting patiently in the fridge, so tonight it was turkey mince 'cake' (my son calls it cake, but really its more like a baked turkey burger)


Dessert was amazing. Yesterday I was given both rhubarb and gooseberries. I cooked them both up today, the rhubarb was cooked with grated fresh ginger and the gooseberries with cinnamon, cloves and nutmeg. My kitchen smelt divine. It was hard to choose which to eat for tea, but eventually i decided on rhubarb, served with coconut milk. The flavours went together brilliantly and it was delicious - I definitely recommend this one!


So in summary - I really enjoyed my food today! Now to think about what to eat tomorrow.

    I like the look of your pesto omelette too - now that I've found myself some dairy free pesto I shall be trying that out. Turkey cake looks (and sounds) great too ;) x

  2. Turkey 'cake' is what my son calls it - I don't have a name for it so that will do. Its pretty much a burger mix (mince, egg, a little bit of almond flour, onion, herbs pieces etc) but cooked in a baking tin in the oven. Often doing things that just go in the oven is a good idea for our dinners as then I can spend time with playing trains, which makes him much happier!
