Sausage meat and Courgette "pasta" recipe



One of the first things I tried from the Wheat Belly Book was the Zucchini Pasta with Baby Bella Mushrooms recipe. Typically though, I didn't follow the recipe as I didn't have all of the ingredients or a Julienne Peeler to make Zucchini Pasta (Penny, from Penniless Parenting has a video on how to make Zucchini Pasta). So, instead of fresh basil I used an onion and some sage for flavour, I added a grated carrot too, and I used chopped tomatoes instead of tomato sauce, and I just used ordinary mushrooms. Anyway despite all that, what we ate was really nice. BB loved it too.

Ingredients

4 (wheat free) sausages
1 onion
a cup of chopped mushrooms
2 courgettes grated
1 carrot grated
garlic pepper
sage (or mixed herbs would be nice too)
2 tbsp olive or avocado oil
200g chopped tomatoes
grated parmesan

Method

  • Remove the sausage meat from the skins and chop or mash into small pieces and fry  in a small amount of the oil 
  • When the sausage is almost cooked add the onion and mushroom, and a little more oil if needed and fry until the onion starts to go clear
  • Add the grated courgette and and carrot, along with the seasoning and cook for another 5 mins or so
  • When the courgette and carrot is cooked, add the tomatoes and stir in and heat until warm
  • Finally add the grated parmesan and mix well
This amount should serve 2 quite comfortably.
