Salad for Breakfast!




Since I became wheat free, I have really been enjoying salads for breakfast. Yes, some people do think I am bizarre, but it's great to start the day with something so fresh and nutritious.



Today's salad was made up of

  • A generous handful of green leaves (spinach, watercress and rocket)
  • About 8 baby plum tomatoes (halved)
  • 1/2 an avocado (sliced)
  • A grated carrot
  • 25g grated cheese
  • tbsp pumpkin seeds
  • tbsp sunflower seeds
  • tbsp cashew pieces





then I added a dressing made from


  • tbsp olive oil
  • tsp balsamic vinegar
  • tsp basil pesto (wheat free)
