Blueberry Muffin Recipe




Ingredients

2 cups self raising flour
2 tsp baking powder
a pinch of salt
1/2 cup sugar
2 eggs
75g melted butter
3/4 cup milk
250g-300g frozen blueberries

Method

1. Sift the flour, add the baking powder, salt and sugar and give it a very quick whiz with an electric whisk to mix it all together and add a little air.
2. Beat the eggs, then add the butter and the milk and mix together.
3. Add the wet ingredients to the dry ingreadients and fold together (don't mix it too much!)
4. Fold in the blueberries straight from the freezer
5. Share the mix between 12 muffin cases and bake at 200ÂșC for about 20 mins or until golden
